Hello Nisha,
1. For soaking fruits, packed juices will work perfectly for this recipe. But make sure to buy clear juices and not fruits juices with pulp.
2. All spice is the name of a spice which is a mix of different spices together (its malayalam word is sarvasugandhi).

I have 2 q’s:
1) For soaking fruits, would you recommend fresh juice or packed will do?
2) All spice powder comprises of which all spices? I saw you mention only cinnamon and cloves. Is that all?

Hi Mala, you should use unbleached all-purpose flour for this recipe. Any good brand like King Arthur, Bob’s Redmill, or Pillsbury, should do.

Hi Nanteza, If you are living in a hot and humid place then you can keep it outside for a maximum of 3-4 days. Otherwise you can keep the cake outside wrapped in aluminium foil for upto a week and later refrigerate.

Updated: Hi Lakshmi, sorry for the confusion. If using a non-alcoholic liquid, I recommend soaking for at least a day but you may do so for a few days up to a week. Refrigerate it after 24 hours. I have updated the Notes section of my recipe as well.

I have a silly question. The soaking is not in the refrigerator right? I was wondering if I keep it outside will it get spoit?

Yes, you can use that but regular grape juice should be sufficient.

Yes Vimala, it is normal due to the reaction of orange juice. I had already mentioned this in the Notes section.

Hi.tried this cake.but my batter after mixing the soaked nuts looked curdled is it normal or what have i done wrong.

Hi, although I haven’t tried freezing any cakes, you should be able to freeze it for 2 months like any other fruit cake, without any issues.
