In reply to Iris. Hi Iris, for this recipe the salt added is not just as a preservative but also is a part of the flavor of the pickle. Since it varies based on the sourness of the lemons and the sweetness of the dates used, you will have to taste and season accordingly. This recipe will definitely need more than a teaspoon of salt.

Hi,

How much salt do you use?

I’m aware that salt is a preservative in chutneys and pickles, do I’d like to be sure that I put enough into the marinade.

I make a date and tomato chutney, very unique to Bengali cuisine. But this pickle with lemon and dates sounds so unique. I should try sometime.
