I have used here panko breadcrumbs, which are Japanese style breadcrumbs commonly used to coat deep fried foods. Since it is made from bread without the crust, deep fried foods will remain crispy and crunchy. You can always try out a homemade version too. The outer crust of the panko bread crumbs usually lack flavour, so I recommend seasoning the breadcrumbs with salt and pepper to make that first bite memorable.</p>

<p><em><strong><u>For making Tartar Sauce</u></strong></em></p>

<li>5-6 tbsp mayonnaise</li>
<li>1 tbsp shallots (finely chopped)</li>
<li>1 tbsp pickled cucumbers (finely chopped)</li>
<li>1 tbsp lemon juice</li>
<li>1 tsp parsley (finely chopped)</li>
</ul>
<p><em><strong><u>For making Fish Fingers</u></strong></em></p>
<ul>
<li>3 tilapia fillets</li>
<li>1 tbsp lemon juice</li>
<li>1½ cup panko bread crumbs</li>
<li>1 egg (beaten)</li>
<li>salt (as required)</li>
<li>pepper (as required)</li>
<li>oil (as required)</li>
</ul>
<p><strong><u>INSTRUCTIONS</u></strong></p>
<p><em><strong><u>Preparation of Tartar Sauce</u></strong></em></p>
<ol>
<li>Mix mayonnaise, lemon juice, shallots, pickled cucumbers and parley.</li>
<li>Beat well till the sauce is properly combined.</li>
</ol>
<p><em><strong><u>Preparation of Fish Fingers</u></strong></em></p>
<ol>
<li>Cut the fish fillets into finger length pieces. Marinate with lemon juice, salt and pepper, and set aside for 10 minutes.</li>
<li>In a bowl, mix panko bread crumbs with a little salt and pepper.</li>
<li>In another small bowl set aside the beaten egg.</li>
<li>To a large skillet add oil and heat on a high flame till it reached the frying temperature.</li>
<li>Take each fish finger and dip in the egg batter, then coat with bread crumbs. Turn the flame to a medium and carefully drop each finger in to the frying pan.</li>
<li>Deep fry until they turn golden brown. Ensure that you do not crowd the pan and leave ample space between each fish finger.</li>
<li>Transfer the cooked fingers on to a paper towel to drain out the excess oil.</li>
</ol>
<p>Serve with tartar sauce.</p>

She learned the preparation of authentic palak dal from her North-Indian friends a long time ago, and later added her twist with South-Indian ingredients. For those who do not know, there are huge differences in dishes prepared across the various provinces of India. This recipe was new to me as we never cooked green spinach at my home. Whenever we both talk about this dish, she used to tell me the story of how she used to feed my husband when he was a kid with this dish as he was a huge fan of “Popeye the Sailor Man”, he enjoyed it hoping to become strong as Popeye… n that’s how this curry became my husband’s favorite dish…!!</p>

<p><strong><u>INGREDIENTS</u></strong></p>
<ul>
<li>1 ½ cup spinach (finely chopped)</li>
<li>½ cup split pigeon peas / toor dal / tuvara parippu</li>
<li>½ tsp turmeric powder</li>
<li>½ cup grated coconut</li>
<li>2 garlic cloves</li>
<li>½ tsp cumin seeds / jeera</li>
<li>2 green chilies</li>
<li>1 tomato (chopped)</li>
<li>mustard seeds (a pinch)</li>
<li>2 dried red chilies</li>
<li>salt (as required)</li>
<li>2 cups of water</li>
</ul>
<p><strong><u>INSTRUCTIONS</u></strong></p>
<ol>
<li>Add dal, spinach, water and a little salt in to a pressure cooker and cook till its whistle blows once.</li>
<li>Meantime, make a paste of coconut, garlic, turmeric powder, green chilies and cumin seeds, and keep aside.</li>
<li>To the cooked dal, add the coconut paste and boil the curry on a low flame.</li>
<li>If you prefer a thin curry then add another ½ cup of water, otherwise skip.</li>
<li>In another pan prepare the tempering by adding a little oil, mustard seeds and dried red chilies.</li>
<li>Once the mustard seeds splutter, add chopped tomatoes and saute for a while till it turns mushy.</li>
<li>Add this tempering to the boiling dal and mix well. Check for the seasoning.</li>
<li>When the curry starts to thicken up, turn off the flame.</li>
</ol>
<p>Serve hot with steamed rice or roti.</p>
