Back to my Hyderabad memories, I still remember searching for mascarpone cheese and ladyfinger biscuits in vain, and then following Masterchef Pankaj Bhadouria’s Tiramisu recipe using sponge cakes, hung yogurt and custard…. Oh my, it was sooo delicious! That gave me the confidence to try it again, and after tasting the original version at various restaurants I absolutely fell in love with this dessert.</p>

Savoiardi/Ladyfinger biscuits is a pretty hard to find ingredient in a small town like mine, and so whenever I need them I head to the nearest World Market Store where you will definitely find it, or else replace it with Nila Biscuits which is an equally good alternative when making tiramisu, and quite commonly available in all stores.<br />

You can skip it altogether if you prefer an alcohol-free version. Also, for my vegetarian friends out there, this recipe is Eggless! Yes, you heard it&#8230;no raw eggs used!</p>
<p>This dessert is a definite crowd pleaser; perfect for your parties, can be prepared in a baking dish or in individual cups, &amp; can be made in advance&#8230; If there are any leftovers, you can also refrigerate it for a few days!</p>

And this Swiss roll of Tiramisu is another version of the dessert without losing its authentic taste. The Swiss roll cake can be describes as “bakes quick and while hot; spread with cream, roll carefully as a log, wrap it in a cloth, and when cold cut into slices”.  There are many variations of Swiss roll in different countries, and nowadays the modern versions have cream replaced with jam roll, chocolate and many more. So, here we are skipping the use of lady fingers, and instead baking a sponge cake for the base which is then rolled and cooled, filled with mascarpone mix and again cooled and set, to make the beautiful roll of Tiramisu.</p>

One of the main takeaways for me while preparing this cake was the importance of the eggs. When your recipe calls for soft peaks from egg whites, make sure you use freshly bought eggs and the separated whites contain no specs of yolk. The bowl which you use to beat should be free from oil. And just have a look at the important things to be considered when rolling a cake (esp if you are a newbie like me).</p>

<li>Baking takes a maximum of 10-15 minutes, do not exceed more than 15 minutes. Roll the cake when it is really warm, which enables to roll it perfectly.</li>
<li>Use the support of a parchment paper or a towel dusted generously with powdered sugar, it helps to roll it neatly.</li>
<li>While filling cream, it’s ideal to leave a ½ inch border on all the sides.</li>
<li>Starting from the long side nearest to you, roll up the cake leaving the seam side down on the baking sheet.</li>
</ul>

Trim the edges. Using the towel, roll up the cake, and once rolled wrap it in the towel. <li>If you prefer non-alcoholic, substitute Marsala with watered down red grape juice or cranberry juice; but of course the taste wouldn’t be exactly the same.</li>
