From then on, I’ve lost my inhibition to this leafy vegetable and started exploring various dishes made with it across restaurants; be it in salads, soups, and so on. Slowly my taste buds started liking it and considering the endless goodness of Kale and its health benefits, I’ve decided to incorporate it in our daily diet focusing on staple foods like dal curry/lentil curry which is an integral part of Indian cuisine.</p>

This recipe is quite similar to <span style="color: #3366ff;"><a style="color: #3366ff;" href="http://www.pepperdelight.com/spinach-lentil-curry-palak-toor-dal/" target="_blank" rel="noopener">Spinach lentil curry</a></span> in its preparation, but it does taste different. Usually, grated coconut is not common in dal curries but I’ve added it to mine…Well, my Kerala roots are to blame for that I guess, right?</p>

Add ½ cup water if the dal/lentil mixture is too thick.</div></li><li id="wprm-recipe-2139-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">In a separate pan, add oil and splutter mustard seeds. Add dry red chilies and chopped tomatoes, sauté on a medium flame until it becomes mushy. Add this to the boiling dal mix in the cooker.</div></li><li id="wprm-recipe-2139-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Reduce the heat of the cooker to a low and allow it to cook for another 5-10 minutes or until it starts turning thick. The dish is quite similar to Modur Pulao /Kashmiri Sweet Pulao with the only difference being the omission of sugar from its recipe while cooking the rice.</p>
<p>The traditional preparation of this pulao is with dry fruits and nuts, but you can also add your choice of vegetables like carrots, beans, peas or toasted paneer, along with fresh fruits; which is my favorite part. It’s a mildly sweet dish, so pairing it with a spicy curry makes it a wonderful combo.</p>
<p>This recipe also works wonderfully for your meal prep days. A note though, add fresh fruits to your dish only before serving!</p>

Keep aside.</div></li><li id="wprm-recipe-1968-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Into the same pan, fry the sliced onions until it turns brown. Keep aside.</div></li><li id="wprm-recipe-1968-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">In a separate pot/pan suitable for cooking rice, add ghee and sauté the cardamom, cinnamon, clove, star anise and bay leaf on a medium flame, until they become fragrant.</div></li><li id="wprm-recipe-1968-step-0-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Add the drained rice, salt, water, milk and saffron soaked milk. Close the lid and allow it to boil. Once it boils, reduce the flame to low, cook for 10-12 minutes till the water is completely absorbed. Turn off the flame, fluff the cooked rice using a fork and keep aside to cool.</span></div></li><li id="wprm-recipe-1968-step-0-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Once the rice cools down to a warm, add the fried onions, nuts, raisins, chopped pineapple and pomegranate seeds, toss to mix completely. Garnish with chopped cilantro leaves.</div></li><li id="wprm-recipe-1968-step-0-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Serve with spicy curries.</div></li></ul></div></div>

Biriyani is basically a mixed rice dish made of spices, meat n rice, and its different varieties and their roots are spread across the Indian sub-continent. Of the many stories behind it’s entry to India, the one I loved the most was of the Great Shah Jahan’s (who built Taj Mahal) wife Queen Mumtaz Mahal. It is said that when she visited the army camps, seeing the soldiers’ weak and under nourished, she ordered the chef to make a dish with all the goodness combining rice and meat, and feed them; and hence biriyani originated and became popular in India…</p>

Traditionally biriyani is prepared as “dum” which means slow cooked in a clay pot with heat from burning charcoal. The mouth of the clay pot is sealed with a dough paste made of flour, and the rice and meat is cooked with aromatic spices and herbs until the meat turns tender making it a royal treat.</p>

Spices, curry powders, fresh herbs like cilantro and mint leaves, are used generously in the preparation. Cashews and sultana raisins sautéed in ghee/clarified butter is added during layering which gives the sweetness and richness to the meal. And topping with saffron makes the dish exquisite.</p>

<div id="recipe-1348-instructions" class="wprm-recipe-instructions-container wprm-recipe-1348-instructions-container wprm-block-text-normal" data-recipe="1348"><h3 class="wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none" style="">Instructions</h3><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">For marinating Prawns</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-1348-step-0-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Clean, peel and devein prawns.</div></li><li id="wprm-recipe-1348-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Mix the ingredients of the marinade properly, add salt as needed.</div></li><li id="wprm-recipe-1348-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Marinate the cleaned prawns and keep aside for 30 mins.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">For Preparing Rice</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-1348-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Wash and soak rice for 30 minutes and drain the water completely.</div></li><li id="wprm-recipe-1348-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Heat ghee in a skillet; add cardamoms, cinnamon, clove, star anise, pepper corns, bay leaf, and saute until fragrant.</div></li><li id="wprm-recipe-1348-step-1-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add the drained rice with a little salt and stir continuously for 2 minutes. When the rice starts crackling, pour water, lemon juice and cook till water is completely absorbed. Fluff it up using a fork and keep it aside.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">For preparing Prawn Masala</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-1348-step-2-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Heat oil in a pan, shallow fry the marinated prawns on both sides. Remove from the pan and keep aside.</div></li><li id="wprm-recipe-1348-step-2-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Into the same pan, add sliced onions, saute until they are translucent.</div></li><li id="wprm-recipe-1348-step-2-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">In the meantime, grind ginger, garlic and green chilies to a thick paste.</div></li><li id="wprm-recipe-1348-step-2-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add the green paste to the pan and saute for 2 minutes.</div></li><li id="wprm-recipe-1348-step-2-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add chopped tomato and place the lid, cook for 2 minutes until it turns mushy.</div></li><li id="wprm-recipe-1348-step-2-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add pepper powder, chili powder and garam masala, stir well. Followed by adding chopped mint and cilantro leaves.</div></li><li id="wprm-recipe-1348-step-2-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Add whisked yogurt, prawns, and mix well with the masala, check for seasonings.</div></li><li id="wprm-recipe-1348-step-2-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Prawn masala is ready.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">Layering and Garnsih</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-1348-step-3-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Heat ghee/butter in a pan. Fry the sliced onions until they are golden brown. Keep it aside.</div></li><li id="wprm-recipe-1348-step-3-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Into the same pan, fry cashews and raisins until they are golden. Keep aside.</div></li><li id="wprm-recipe-1348-step-3-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Warm milk in a small bowl and mix the saffron strands, allow it to stand for 2 minutes.</div></li><li id="wprm-recipe-1348-step-3-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">For layering, into a heavy bottomed pan add a half of all the prepared ingredients as detailed below. The remaining half is to be repeated later as instructed.</div></li><li id="wprm-recipe-1348-step-3-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Start with spreading the prepared masala first, evenly covering the bottom of the pan.</div></li><li id="wprm-recipe-1348-step-3-5" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Follow by spreading rice on top of it. Sprinkle cashews, raisins, fried onions, saffron milk, and cilantro mint leaves.</div></li><li id="wprm-recipe-1348-step-3-6" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Repeat the process of steps 5 &amp; 6 with the second half of the ingredients.</div></li><li id="wprm-recipe-1348-step-3-7" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Cover the pan with the lid and cook the biriyani on low flame for 10 minutes.</div></li><li id="wprm-recipe-1348-step-3-8" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Serve warm with pappad, salad and pickles.</div></li></ul></div></div>

I was a bit confused with the choice of sides as mostly all of my fish recipes go with rice or flat bread, and so this time I did some research to pick the ideal sides for this tilapia dish. I finally chose a simple rice pilaf and steamed broccoli. And to finish it, a drizzle of lemon juice! Done, your dish is ready!!!</p>

Parmesan cheese                           : ½ cup<br />
Italian herbs (dried)                       : 1 teaspoon (optional)<br />
Panko Breadcrumbs                     : 1 cup<br />
Pepper                                               :  1tbsp<br />
Olive oil                                            : as required<br />
Salt                                                     : as required<br />
Fresh parsley                                   : 1 tbsp (finely chopped)<br />
Lemon                                               : ½ of one lemon (drizzle)<br />
Broccoli florets                               : 8- 12</p>
<p><strong><em><u>For Rice Pilaf:</u></em></strong></p>
<p>Long grain white rice                    : 1 cup<br />
Butter                                                 : 3 tbsp<br />
Garlic                                                 : 1 (finely chopped)<br />
White/Yellow onion                      : 1 (sliced into cubes)<br />
Parsley                                               : 1 tbsp (finely chopped)<br />
Low sodium chicken broth          : 1 ½ cup<br />
Water                                                  : 1 cup</p>
<p><strong><u>INSTRUCTIONS</u></strong></p>
<p><strong><em><u>For Parmesan crusted Tilapia:</u></em></strong></p>
<ol>
<li>Preheat oven to 400 degrees.</li>
<li>In the meantime clean and pat tilapia fillets. In a small bowl mix the dried ingredients; panko breadcrumbs, italian herbs (dried), pepper, salt, and parmesan cheese.</li>
<li>Brush tilapia with olive oil on both sides and dip it in the prepared dry mixture.</li>
<li>Top with chopped fresh parsley leaves.</li>
<li>Bake for about 12 to 15 mins until the fish becomes flaky inside. Serve with a drizzle of lemon juice.</li>
</ol>
<p>Steam cook broccoli and keep aside. You can also drizzle olive oil, salt, and pepper if you don’t like plain steamed broccoli.</p>
<p><strong><em><u>For Rice Pilaf:</u></em></strong></p>
<ol>
<li>Wash and soak rice in water for about 15 minutes.</li>
<li>Drain it and keep aside.</li>
<li>In the meantime, heat butter in a pan. Add chopped garlic and saute till the raw smell settles down.</li>
<li>Add sliced onion, salt and saute on a low flame for about 3 minutes. Ensure not to burn the onions.</li>
<li>Add drained rice, and stir and toast well. Toast until the rice become white and starts to crack.</li>
<li>Add chicken broth and water, cover and cook the rice till the water dries out.</li>
<li>Add chopped parsley leaves, and fluff the rice.</li>
</ol>
<p>Serve baked tilapia with rice pilaf and steamed broccoli.</p>
<p><strong>Note:</strong></p>
<ul>
<li>For this recipe I used panko breadcrumbs which is a Japanese style breadcrumbs commonly used to coat deep fried foods. As it is made from bread without crust, deep frying foods will stay crispy and crunchy. As an alternative you can also use a homemade version.</li>
<li>Dried Italian herbs consist of Marjoram, Oregano, Thyme, Savory, Basil, Sage and Rosemary, and are readily available in stores.</li>
