It tastes so addictive that my taste buds forced me to replicate the dish in my kitchen and boy… after so many failures I was able to finally perfect this beauty of a recipe.</p>
<p>I love Salmon as it cooks pretty fast and is full of endless goodness, not to mention the <em>Omega 3</em>. Unlike your regular cooking, this dish is unique on its own for its broiled preparation. Its technique does not require you to flip the fish half way through the cook and still comes out evenly done, Well you might be wondering how is that possible? Simple, first heat the pan alone in the broiler and once hot, place the salmon in the pan and continue broiling so that both top and the bottom cook evenly, it results in a crispier outer(if using skin) with a tender flaky inner flesh.</p>

As part of the cooking steps, the second half of <em>glazing</em> the fish with bourbon sauce and <em>caramelizing</em> is an interesting process too. The sauce consistency has to be sticky syrupy, so make sure you boil the sauce while whisking it for a few minutes to make it thicker. Once the glaze is ready, brush the salmon with the sauce and broil again to caramelize it.  Although the bourbon is an alcohol and you may not be keen to try that, this recipe doesn’t give you any hint of its taste. And, it pairs wonderfully with a bowl of steamed rice and some fresh veggies.</p>

When it starts to bubble, reduce the heat and simmer it for 5-6 mins or until reduced to a half, and keep aside. The sauce should have a syrupy consistency.</span></div></li><li id="wprm-recipe-2332-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Preheat your oven to a broil and position your racks not too close to the coil. Place your empty pan in the oven and let it heat for 6 minutes. Grease aluminum foil with cooking spray and place salmon fillets on it. Pat dry the fillets and season with salt and pepper.</div></li><li id="wprm-recipe-2332-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Remove the pan from the oven using an oven mitt, place the foil with salmon on to the pan. Broil for 8-10 minutes or until cooked, depending upon the thickness of the salmon.</div></li><li id="wprm-recipe-2332-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Remove from the oven and baste it with the prepared glaze. Broil again for 1-2 minutes until the sauce is caramelized. Make sure to keep an eye on the salmon to prevent it from burning.</div></li><li id="wprm-recipe-2332-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Turn off the oven and remove the pan. This dish tastes best with a bowl of basmati rice mixed with fried raisins and cashews, and cucumber yogurt raita. The sweetness and crunchiness from the raisins and cashews, along with the cooler cucumber raita, complement the smokiness and heat from the tandoori salmon, creating the perfect balance of flavors.</p>

<div id="recipe-1694-instructions" class="wprm-recipe-instructions-container wprm-recipe-1694-instructions-container wprm-block-text-normal" data-recipe="1694"><h3 class="wprm-recipe-header wprm-recipe-instructions-header wprm-block-text-bold wprm-align-left wprm-header-decoration-none" style="">Instructions</h3><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">For the Tandoori Salmon</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-1694-step-0-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Marinate the salmon with ginger-garlic paste, chili powder, coriander powder, turmeric powder, cumin, garam masala, fenugreek leaves, lemon juice, yogurt and salt for 4-5 hours (or at least 2 hrs).</div></li><li id="wprm-recipe-1694-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Preheat oven to 400 degree F. Line a baking tray with aluminum foil and spray cooking oil.</div></li><li id="wprm-recipe-1694-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Line the marinated salmon on the tray and bake for 10 minutes in the oven. Then turn up the heat to a broil and cook for 5-6 minutes until it starts to char on the surface.</div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">For the Rice</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-1694-step-1-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">Wash and soak rice for 30 minutes and drain the water completely. Cook the rice in water and salt till the water is completely absorbed. Keep aside.</span></div></li><li id="wprm-recipe-1694-step-1-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;"><span style="display: block;">In a small pan, add ghee and fry cashews and raisins until they are golden. Add to the rice and fluff with a fork, garnish with chopped cilantro leaves.</span></div></li></ul></div><div class="wprm-recipe-instruction-group"><h4 class="wprm-recipe-group-name wprm-recipe-instruction-group-name wprm-block-text-bold">For the Cucumber  Raita</h4><ul class="wprm-recipe-instructions"><li id="wprm-recipe-1694-step-2-0" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Mix everything together and adjust seasoning.</div></li></ul></div></div>

Salmon obviously was my next choice as I know you don’t have to fry them and they are great when grilled or baked. So I went ahead with my spicy version of salmon, the tacos turned out great and my husband loved it. Spicy fish is very common at my hometown in India, but we’ve never tried one with salmon before. This spicy salmon is soo good that it goes well with rice too; we had some leftovers which when paired with rice was delicious. For the sauce I’ve used avocado as the base, avocado and sour cream together is a perfect blend… it’s just takes the flavour to a whole new level.</p>

It was around the time we moved to the US and were eagerly exploring the various restaurants out here, my husband always used to tease me for my sea food cravings and he wanted me to definitely try it, so I thought why not give it a shot. But for some reason I did not like it at all and struggled to finish my plate. I finally had to order a dessert to clear the taste from my mouth.</p>

Still confused as to how everybody loves Salmon, I thought it just might have been my first experience and decided to give it a try cooking at home with a new combination. And Yes, it was a success! We both loved it!!</p>

<p>The quick preparation with only a drizzle of lemon juice, thyme and pepper, is the highlight of this recipe. And of course the supporting sauce along with it, made our day.</p>

<p><strong> </strong><strong><u>INGREDIENTS</u></strong></p>
<p>Salmon steaks  : 4 (6 ounce)<br />
Ground thyme  : 1 ½ tbsp<br />
Lemon juice      : 2 tbsp<br />
Lemon slice       : to garnish<br />
Pepper                : as required<br />
Salt                       : as required<br />
Cooking spray</p>
<p><strong><u>INSTRUCTIONS</u></strong></p>
<ol>
<li>Preheat oven to 375 degrees.</li>
<li>Season Salmon steaks with salt, pepper and ground thyme. Drizzle lemon juice on top.</li>
<li>Arrange a baking tray with sheet. Spray some cooking oil on it.</li>
<li>Place the salmon steaks on baking tray and cook for about 3 &#8211; 4 minutes. Carefully flip opposite side and cook for about 3 more minutes until it become flaky.</li>
</ol>
<p><em><strong><u>Cilantro Yogurt Sauce :</u></strong></em></p>
<p><u></u><span style="text-decoration: underline;"><strong>INGREDIENTS</strong></span></p>
<p>Lemon juice           : 2 tbsp<br />
Coriander leaves   : 1 sprigs (finely chopped)<br />
Mayonnaise           : 2 tbsp<br />
Pepper                     : as required<br />
Salt                            : as required<br />
Greek Yogurt (2% reduced fat): 2 tbsp</p>
<p><strong><u>INSTRUCTIONS</u></strong></p>
<ul>
<li>In a small bowl, combine yogurt (reduced fat Greek yogurt), cilantro leaves chopped, mayonnaise, lemon juice, salt and pepper. Mix properly.</li>
</ul>
<p><strong><u>Green Salad Vinaigrette :</u></strong></p>
<ul>
<li>Mix green salad leaves with salt and lime juice. Drizzle balsamic vinaigrette on it.</li>
</ul>
<p>Serve Baked salmon on the bed of green salad and drizzle sauce and lemon juice on top.</p>
