I am using Daily Delight’s frozen tender jackfruit which is readily available in most of the Indian/Asian grocery stores. It is not mushy as the canned ones.
About King Fish, we have a fresh Kerala fish distributor here in St. Louis. An other option is buying frozen (Seafood Delight branch, it’s Daily Delight’s seafood section).

You can find frozen anchovies in Asian stores, global markets, and sometimes in Walmart too.

This is my go to recipe for a boozy plum cake to warm up the winters a tad bit. Baked it first during the covid lock down times and it was a raging hit. Baked it a couple more times and it always turned out amazing. Missed baking it last year though. But this year, the fruits were soaked in rum, in early Nov. Intending to buy an oven, I was sure I’d be baking this for Christmas. Long story short, the oven has still not been bought and yesterday night, the baker in me took charge. Baked this in a pressure cooker. Took 65 mins of baking and the house smelt heavenly.
The cake, oh my God!!!! It’s divine. I wish I could post a pic.

Yes, the ingredient for this recipe is Toor Dal / Yellow Pigeon peas / തുവരപരിപ്പ് , but the dish is called Sultani Dal for it’s origins!

I am referring to Thengakothu (in Malayalam), which you may allude to as Coconut bits/bites/slices/flakes.

If you don’t have buttermilk just use normal greek yogurt and thin it with milk till it has the consistency of thicker than milk but thinner than yoghurt.
It’s pretty much just drinkable yoghurt. In the NL we drink it like you would with a glass of milk in the morning..

You can use Top Blade and Top Loin cut, Chuck Roast or Stew Cut (which is easier) for this recipe.

I haven’t tried it out, but since plantain is firmer using other bananas might make the dish very mushy. If you happen to try it, do let me know how it turns out 🙂
